Director and Photographer Amanda Marsalis beautifully captures the lived and practiced philosophy of the infamous Chez Panisse restaurant. 

Chez Panisse was founded by Alice waters, a pioneer of California's 'Slow Food Movement' that practises (amongst other things) planting, protecting and sourcing diverse local sustainable foods, supporting local farmers and eating seasonally. 

Over the course of a year Marsalis stunningly captured calculated moments of mature stillness and long shadowed days with employees and apprentices committing themselves to their craft, the painstaking shelling English peas, the colors of freshly picked produce and layers of perfectly sliced Meyer lemons all combine to pay a brilliant tribute to the hard work it takes to produce the best tasting and sustainable food in the world.
